Salsify

Salsify - A member of the dandelion family, this long tapering root has a brown skin and a pale creamy white flesh.

It can be boiled, sautéed and when cooked has a distinctive flavour not unlike that of the Jerusalem Artichoke. It's also sometimes known as the 'Oyster Plant' because of its similar taste to oysters. Salsify is in season during the winter.
